Go nuts with squash
Yield: 4 servings
Preparation Time: 10 minutes; Baking Time: 30 minutes
2 | acorn squash (1 pound each) | ||

2/3 | cup | cracker crumbs | |
|
|||
1/3 | cup | coarsely chopped pecans | |
|
|||
1/3 | cup | butter or margarine, melted | |
|
|||
3 | tablespoons | brown sugar | |
|
|||
1/2 | teaspoon | salt | |
|
|||
1/4 | teaspoon | nutmeg | |
|
Cut each squash in half; remove seeds and fibers. Stir together remaining ingredients; spoon 1/4 of mixture into each half. Place squash in ungreased baking dish, 13-1/2x9x2 inches. Pour water into dish to 1/4-inch depth; cover with aluminum foil. Bake in 400 F. oven 30 minutes or until tender.
